Ingredients: 3 eggs 1¾ cups (450 mL) buttermilk ½ cup (100 mL) melted butter 2 cups (500 mL) all purpose flour 1 Tbsp (15 ml) baking powder 1⁄4 cup (60 ml) superfine sugar 1 tsp (5 mL) salt Method: Pre-heat waffle iron. Whisk together flour, sugar and salt into a large mixing bowl and make a well in the centre. Whisk together eggs, buttermilk and vegetable oil in a large jug until well combined. Whisk egg & buttermilk mixture Into flour mixture to form a batter; with just a few lumps. If batter is too thick, stir in an extra 1–2 Tbsp of buttermilk. Pour 1⁄2 cup of batter into each waffle square and close lid to cook. Repeat with remaining batter.
